Chef Rosie.
Trained across multiple disciplines — from kitchen to bar to front-of-house — Rosie has spent over a decade learning what makes hospitality memorable. Fine dining. Specialty coffee. Culinary education. Each chapter sharpening the philosophy that now underpins everything the Academy teaches.
She founded ESC 360 Academy to share what she has spent years perfecting: the systems, standards, and sensibility that transform a capable barista into an exceptional one.
Across eight tracks and dozens of lessons, Rosie brings the same attention to detail she expects from every cup pulled in her cafe. The goal is not to make you faster. It is to make you considered.
