The Beginning

A cafe built on the belief that great coffee is an art form.

Escape 360 was founded on a simple conviction: hospitality is a discipline worth mastering. Not a job to pass through, but a craft to build a life around. Every detail of the space, from the beans we source to the music we play, exists in service of that idea.

What began as a luxury cafe became something more. Guests started asking how their drinks were made. Baristas from across the city asked to stage behind the bar. The curiosity was unmistakable, and the Academy was born from it.

Today, ESC 360 Academy carries that founding philosophy into education. We teach coffee and hospitality the way we practice them — with precision, warmth, and the patience that mastery demands.

Rosie is a hospitality professional trained across multiple disciplines, from kitchen to bar to the front-of-house floor. Her career spans fine dining, specialty coffee, and culinary education — each chapter sharpening a philosophy that now underpins everything the Academy teaches.

She founded ESC 360 Academy to share what she has spent years perfecting: the systems, standards, and sensibility that transform a capable barista into an exceptional one. Her teaching is technical without being cold, demanding without being rigid.

Across eight tracks and dozens of lessons, Rosie brings the same attention to detail she expects from every cup pulled in her cafe. The goal is not to make you faster. It is to make you considered.

The Path

Fifteen years, distilled.

  1. 2009

    First kitchen

    Rosie's first professional role, in a small fine-dining restaurant where mise en place was treated as a religion.

  2. 2014

    Crossing into coffee

    A pivot from kitchen to bar — joining a specialty roastery and discovering that espresso required the same discipline as a tasting menu.

  3. 2018

    Head of training

    Building the in-house barista programme for a 12-cafe group across three cities, refining the teaching system that would later become ESC 360.

  4. 2024

    Escape 360 opens

    A flagship cafe in Dubai built around the bar — designed to serve guests by day and host the Academy's in-person workshops by evening.

  5. 2026

    The Academy

    ESC 360 Academy launches with eight tracks, taught entirely by Rosie, distilling fifteen years of practice into a structured curriculum.
